The 263 has been buffed/nerfed to make it more of an assault type tank, if you enjoy heavies you’ll prob enjoy it more. The 268 is a great tank but must fight from the rear/hard cover.

I assault tank and peak a boom with the 268.
My 263 can't hit an AFK Maus at 2m anymore - so I parked it

I don't have either of them, but that's never stopped me from butting in...
263 if you want a pureblooded assault TD that values frontal armor, top speed, and DPM above all else.
268 if you want a more refined sniper that combines some of the best pen values in the game with a very accurate gun, but loses quite a bit of reliable armor and mobility, but it still has enough to play an assault TD in a pinch.
In terms of how the grind is, the SU-100 is fun once you get the 122, the SU-152 is one of the most fun tanks I've ever played, the ISU-152 isn't as fun as the SU imho, but is more competitive and overall better tier-for-tier, and the 704 is just an ISU with better survivability.
I can't speak for the 263's line (as I've played none of them), other than they all have amazing DPM for their tiers (besides the SU-101) and great mobility in exchange for alpha damage and having some of the worst gun depression in the game.
Hope that helps.
